1. The timetable defines trains. All trains but one (and that's the train selected as player) are AI trains.
So what do you mean by 'create AI trains'?
If you mean to create trains which cannot be selected as player train - that's not possible.
2. No idea what you are referring to. Clearly you can zip files, but that has nothing to do with OR.

I am guessing you are asking about how to add a train into the timetable? Mostly I would suggest going back to the open rails manual as there are complexities. In brief, you click the button two to the right of the one circled and fill in the appropriate fields. You do need to have previously made a consist to choose. Then you add start times (which define when the train starts on it's path) and times at each station platform.

There is a small manual for the timetable function that is installed with the v1.2 stable version. With regard to creating a zip it says
"Zip timetable
If you want to give your timetable to other persons, you can create a zip-file of the timetable. The zip-file will contain the timetable and all used paths and consists."
Note that it does not include the stock used, so if you want to pass it on to a friend or post it as a download, you will need to include a list of stock used, preferably the original zip filename and where it can be found.

Is it possible to define the freight train timetable? who does not cross the platform?

In my opinion freight trains can be defined nearly the same way as passenger trains. The only difference is that there are no timings for the platforms required.
