I was wondering how easy it is to add Opening doors to existing Carriages

It depends if existing carriages have the doors modeled as a separeted object from the rest of the coach body...
In that case it may be a question of writing the necessary animation controllers in the shape file.
otherwise only separating them on the original mesh and exporting it again.

There is much in OpenRails about opening doors but very few carriages have them.
Could new models being released have opening doors as standard

It could be made "standard" if everyone built models the same way... but not everyone builds models the same way and not everyone wants to add them. For some it might be worth the effort (and extra drawcalls), but for me it's a solid "nah, no thanks." You're certainly free to download Blender and start building models, of course...

Another way to do this would be to change the carriage texture to be transparent in the area of the doors, and then add a new door shape with animation. The material type for the bodyside would need to be transparent, but this would already be the case if the windows were added as a transparency.

And the new door shape could be added as a freight animation to the carriage, so no need to change the original carriage shape in that case, maybe.

This is definitely more difficult for hinged doors!

It's really just about the possibilities and skill of the author of the model.
It is not a problem to animate sliding, revolving or folding doors. Open Rails can handle this with Q and SHIFT+Q (right and left side of the train) keyboard shortcuts.
Door opening can be signaled at the driver's station and can be accompanied by an appropriate sound effect.

Nice video. Yes it can be done. Hinged doors are definitely more challenging, especially where the carriage has a curved profile (tublehome). Present animation has all doors opening and closing at the same time. With passenger operated doors we would expect some more random behaviour.
