In MSTS, whether a wagon handbrake is set or released is shown the "Train Operations" display (F9) by a change in colour. I cannot see this feature in Open Rails. Is it available?

One of the F5 displays will show if the handbrake is on or not. Before I figured that out, I had a nasty habit of dragging a handbrake or two around because I forgot to release one. The car in the F9 window will not change color like in MSTS

Thanks. That's a pity. Having to watch two displays while carrying out a complicated shunt will take some getting used to!

"Shift + ?". I don't see that documented anywhere.

Does initializing brakes also release all wagon handbrakes which have been manually set?

Whether it's still relevant for you or not, "shft + ;" releases all handbrakes if I'm not mistaken.
