Saw this video of an Open Rails/MSTS ran Hungarian route and steam locomotives. I know it says MSTS on the title, but that is using Open Rails on parts of the video. The give away to Open Rails or MSTS is the way the steam smoke is rendered. MSTS looks more real in the way the smoke effects look. Open Rails still has a way to go with the steam smoke effects.

In my opinion it is not only the sound, which is much better in MSTS. It is also the control system of MSTS. To make a steam engine running there is more realistic than in ProTrainPerfect for example.
Also the consequences which are given, if you cross a red Signal, are more realistic. So in ProtrainPerfect there is sometimes no consequence.
The only reason to buy a new Simulator is to get a better graphic. But is this so important? In my opinion a good Sound Balance a middle class graphic all the time.

I used to have Trainz 2004 installed a long time ago. But that was with my previous computer also. I haven't used it much since then. So it's been in the shelf forever and uninstalled from my system now. There's been some nice addons for it since. But the steamers there still lack the sound depth that we get to hear from MSTS.
Here's one about the Southern Pacific AM-2 4-6-6-2 Cab forward going through Donner Pass. It's about 12 minutes long. Note though the looks may be good, I still think they're lacking much with the sound. Listen to how the locomotive chugs. :)

Gotta say that the scenery is drop dead gorgeous! But is it the quality of the original sound files or is it simply the way that the sim processes the sounds that makes it sound so bad?

Um, that a very, very old soundset.
The newer TC3 and up ones are much better.
